Cela vient de la croyance transmise de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration selon laquelle manger du daegae le jour de l&rsquo;an est un gage de bonne sant\u00e9 et de vigueur physique pour le reste de l&rsquo;ann\u00e9e. Bien qu&rsquo;il soit peu probable que cette coutume se soit r\u00e9pandue dans les march\u00e9s ext\u00e9rieurs, le crabe des neiges est devenu extr\u00eamement populaire aupr\u00e8s des consommateurs du monde entier.<\/p>\n<p><strong>HAUTE SAISON DE P\u00caCHE<\/strong><\/p>\n<p>La plupart des crabes des neiges de Pittman Seafoods sont originaires de Cor\u00e9e du Sud, gr\u00e2ce \u00e0 des partenariats conclus de longue date avec plusieurs producteurs locaux. La majeure partie de ces exploitations poss\u00e8dent leurs propres navires de p\u00eache, ce qui contribue \u00e0 garantir la tra\u00e7abilit\u00e9 et l&rsquo;approvisionnement.<\/p>\n<p>Bien qu&rsquo;il existe quatre esp\u00e8ces portant l&rsquo;appellation de \u00ab\u00a0crabe des neiges\u00a0\u00bb, ces p\u00eacheurs ciblent les vari\u00e9t\u00e9s de l&rsquo;opilio (<em>Chionoecetes opilio<\/em>) et du crabe des neiges rouge (<em>Chionoecetes japonicus<\/em>), qui peuplent abondamment les eaux froides des parties septentrionales de la mer du Japon.<\/p>\n<p><a href=\"https:\/\/academy.pittmanseafoods.com\/wp-content\/uploads\/2020\/08\/Snow-crab-red.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2299\" src=\"https:\/\/academy.pittmanseafoods.com\/wp-content\/uploads\/2020\/08\/Snow-crab-red.jpg\" alt=\"Korean red snow crab\" width=\"1000\" height=\"667\" srcset=\"https:\/\/academy.pittmanseafoods.com\/wp-content\/uploads\/2020\/08\/Snow-crab-red.jpg 1000w, https:\/\/academy.pittmanseafoods.com\/wp-content\/uploads\/2020\/08\/Snow-crab-red-300x200.jpg 300w, https:\/\/academy.pittmanseafoods.com\/wp-content\/uploads\/2020\/08\/Snow-crab-red-768x512.jpg 768w\" sizes=\"(max-width: 1000px) 100vw, 1000px\" \/><\/a><\/p>\n<p>Ces crustac\u00e9s sont p\u00each\u00e9s \u00e0 l&rsquo;aide de pi\u00e8ges \u00e0 app\u00e2t du mois de septembre au mois de juin, le pic de la saison de p\u00eache \u00e9tant g\u00e9n\u00e9ralement situ\u00e9 en f\u00e9vrier. Le total admissible des captures est habituellement compris entre 30.000 et 40.000 tonnes, le crabe des neiges rouge repr\u00e9sentant la majorit\u00e9 du quota. De plus, les crabes des neiges rouges issus de la zone de p\u00eache 61 de la FAO sont actuellement en cours de pr\u00e9-\u00e9valuation, conform\u00e9ment aux normes de durabilit\u00e9 du Conseil d&rsquo;intendance des mers (MSC). S&rsquo;ils passent cette \u00e9tape et que la p\u00eacherie \u00e9volue vers une \u00e9valuation compl\u00e8te, ces crabes pourraient obtenir leur certification avant la fin de 2022.<\/p>\n<p>La grande qualit\u00e9 de l&rsquo;ensemble de ces crabes est largement attribu\u00e9e \u00e0 leur habitat naturel. Ils vivent et se d\u00e9veloppent en effet \u00e0 des profondeurs de 200 m\u00e8tres, o\u00f9 le fond marin poss\u00e8de un sol sous-marin riche et o\u00f9 la temp\u00e9rature de l&rsquo;eau avoisine les 4\u00a0\u00b0C.\u00a0Dans ce milieu, ils se nourrissent essentiellement d&rsquo;invert\u00e9br\u00e9s benthiques. Une fois p\u00each\u00e9s, on les place dans des r\u00e9servoirs d&rsquo;eau de mer, avant de les transporter vers l&rsquo;entreprise de transformation, o\u00f9 ils sont lav\u00e9s, cuits, congel\u00e9s et emball\u00e9s pour le transport. Cette transformation rapide permet de conserver la fra\u00eecheur optimale du produit.<\/p>\n<p>De nombreux crabes qui entrent dans les usines sont transform\u00e9s en sections ou groupes de pattes, mais certains d&rsquo;entre eux prennent la forme de blocs : des pav\u00e9s rectangulaires de chair de crabe cuite, pr\u00eate \u00e0 \u00eatre consomm\u00e9e et congel\u00e9e.
